是的，看你上面的链接很低，但是小Ｋ用了好像不对劲啊。我在下面的看见说是moderately
high。也许小Ｋ对这个敏感？记得小Ｐ好像也是这样？我回头问问小Ｐ妈。
Coconut is considered to be only moderately high in calcium oxalate, so it is okay to have a little once in a while but shouldn't be a staple in the diet of someone with kidney stones.

小Ｋ试椰子酸奶效果不如豆奶酸奶，试椰子ＫＥＦＩＲ，那效果就更差了，可能跟其他的添加剂也有关。

coconut kefir非常好做，特别是现在冬天。 coconut kefir是用纯椰子水加culture starter发酵而成.
1. 椰子汁 : cococut water注意不是椰奶是椰子破开以后里面的液体.
我通常买新鲜的raw, whole椰子, 椰子有尖头和平头，在平头的一面用短刀戳一戳找到椰壳较薄的spot,stab in and 打破一个洞,将椰子放到一个敞口杯子上，椰子水流出来就是发酵原料cococut water. 我用过盒装的椰子汁(一定要是 100% coconut water),效果也还可以, 但是还是新鲜椰子汁作的发酵快味道正.

可以把它煮也可以不煮。因为coconut water本身是无菌的，我一般不煮，只是有时感觉椰子开口spot太软，或有液体流出，有外来菌感染的嫌疑就煮一下。如果煮的话就要等到coconut water凉到彻底不烫手（或用无菌温度计量一下<40度）才能接种。

2. culture starter 可以在这里买，http://shop.bodyecology.com/prodinfo.asp?number=BE010

第一次用它1／4-1/3小袋，做成以后就可以用发酵好的kefir给新鲜的椰子汁接种, 再一罐接一罐做.

3. 将culture starter倒入椰子汁,轻搅一搅，拧上盖子. 一定要用透明玻璃瓶，这样可以看kefir颜色和起气泡等变化,接种以后忌讳摇晃和搅动. 我通常放在厨房countertop上, 冬天室内(heated indoor)大约两天就好. 夏天12个小时就可以了, 夏天也可以放到冰箱里，发酵慢一点但是质量特好。

椰子汁我们家一直很喜欢。 但只是冲泡出来的， 或者是饮料制品。

到现在为止coconut kefir是小S唯一能接受的益生菌，他不仅喜欢kefir的口味，生理上也能接受，有两次还有die off反应(zids)。 我认为普通意义上讲coconut kefir有以下几个特点:
1. 因为是新鲜活菌，益生菌活性相当高,在肠道内"安营扎寨"的本领应该比freeze powder益生菌强.
2. 跟yogert比，coconut kefir不含奶制品，是CF。而且菌种品种多还混合有益酵母菌.
3. 基本无糖，卡路里低，发酵是少量的糖份也被细菌给用了。
4. 缺点是给益生菌cfu定量较困难. 因为菌浓度时高时低，除非做出菌浓度和cfu正比相关的标准曲线，加上每次进食前测菌浓度, 否则无法知道cfu.

我给儿子试过两三种其他的freeze powder益生菌,效果一直不好, 现在还在战战兢兢地尝试，在没找到其他的以前，就只用它了。

上贴中讲到将椰子开洞流汁以后,用菜刀大力破开椰子成两半，把里面的白椰子肉舀出来. 可生吃也可以把白椰子肉用粉碎机打碎, 再放回椰子水中，这才是真正的纯天然椰奶。

椰子全身都是宝。从椰子油到椰子汁，椰子肉都有抗真菌抗细菌的功能，这就是小P妈讲的"椰子汁性寒". "椰子汁是公认的美容佳品,生津利尿、主治热病，其果肉有益气、祛风、驱毒、润颜的功效。"应该源自椰汁的清肝, 抗菌作用. 椰子水是富含钠，钾，钙，镁的电解质饮料，非常容易被人体吸收。而且因为是和 人体血液大致等离子电位，所以还可以用于一定量地替代静脉输液（IV）。在二战和越战期间就有不少这样的做法。

椰子水、椰子汁、椰子奶，这三者经常被混淆，但是功用可能有很大差异。
天然椰子的可食用部分，是椰子水和椰肉。椰子水是清澈透明的。椰肉根据成熟程度从奶皮质感、果冻质感到硬梆梆都有，椰子饭用半熟的椰肉制作，椰蓉椰丝用成熟的制作，越成熟越香郁。
小P妈和青山化桥所提到的椰子汁，应该是椰子水。我们这里是椰子产地，饮食店里的鲜榨椰子汁是椰子水和椰肉混合在果汁机里打出来的，颜色是奶白的，很清香，不需要加糖。 Lisa说的椰子汁，是指这种吧。
椰子奶和市面上所售成品椰子汁及冲调粉，都是椰肉制品，应该是不会含有椰子水的成分的，因为椰子水非常容易腐败，据我所知目前还没有解决防腐问题。没有椰子水，只有成熟椰肉制成的椰子粉，味道非常香，冲调出来的椰奶也很香郁，但是甜度低，一般都要加糖，跟鲜榨是不同的。

椰子油是成熟的椰肉榨出来的。

我们这里的中医普遍认为，椰子水性寒，椰肉特别是成熟椰肉性热。准备怀孕的妇女，中医会提醒不要喝太多椰子水，而建议吃椰肉。我个人的体会也是吃椰肉，无论是生吃还是熟食，都容易上火。

Chinese New Year
China’s most popular traditional holiday, Chinese New Year (CNY) is a time for feasting, family reunions, fun and celebration! Every year, Asians throughout the world spend weeks preparing for the 15-day celebration, officially called the Spring Festival.
As the Chinese use the Lunar calendar for their festivals the date of Chinese New Year changes from year to year. The date corresponds to the new moon (black moon) in either late January or February. Traditionally celebrations last for fifteen days, ending on the date of the full moon.

In 2011, Chinese New year falls Thursday Feb 3rd. It is lunar year 4709, the year of Rabbit according to the Chinese lunar calendar.
Last year, the CNY begins on Sunday, February 14th. It is lunar year 4708, the year of Tiger according to the Chinese lunar calendar.



Animal:




The Chinese calendar is different from that used in the USA. It is made up of a cycle of twelve years, each of them being named after an animal. This is very like our signs of the zodiac. Some people believe that people born in a particular year such as the year of the Dog will have some of the characteristics of that animal.




For The Chinese New Year - The Color Red and Fireworks

At the Chinese New Year red is important. People wear red clothes, they write poems on red paper, and give children 'luck money' in red envelopes.  The symbolism behind the red colour is fire, and fire burns off bad luck.  As for fireworks one belief is that the cracker jacks and sparks frighten away evil spirits.



After the fireworks at the beginning of the celebration of the Chinese new year, comes the more tranquil Lantern Festival on the last day of the festivities.  Most Lantern parades feature a dragon made of silk and bamboo.  The dancers hold the monstrous dragon aloft on sticks.  Their coordination skills make the dragon appear to dance.




















Here are some of the ways you can celebrate CNY:

1. Clean House - Before the New Year arrives, the Chinese consider it very important to give the house a thorough cleaning, sweeping away any bad luck that may have accumulated over the past year.

2. Decorate! - Doors and window panes are also often painted red, considered to be a lucky color. In addition, people like to hang paper-cuts and Chinese Calligraphy on doors and windows. Paper cutting is an ancient Chinese art form.











3. Ware brand new clothes – it will bring you a better New Year and prospect.

4. Don't clean for the first few days of the New Year - if you do any sweeping during this time, you may risk sweeping away your good luck.

5. An important tradition on New Year's Eve is for families to gather together and spend the evening preparing Chinese dumplings (Jiaozi – wheat flour or Yuanzi – rice flour). According to Chinese culture, it is common to hide a coin in one of the dumplings. Whoever gets the dumpling with the coin will supposedly have good luck in the coming year.





6. Give out money packets - On New Years day, children receive the “Spring Festival Money Gift (or yashuiqian), a red packet decorated with gold symbols and filled with "lucky money".





7. Like Thanksgiving and Christmas in the US, Chinese serve festive foods throughout the CNY season. Certain foods are served because they symbolize abundance and good fortune. Besides preparing special dishes, tangerines and oranges are often passed out to children and guests, as they symbolize wealth and good luck.

Story: A Chinese Rabbit Folk Tale 守株待兔

Once upon a time, there was a farmer in the Song State, China. When he was working in a field, he saw a rabbit running past him, then it broke its neck on a tree and died. The farmer grabbed the dead rabbit and made a stew. it was delicious.

After that, the farmer didn't want to work on his field anymore. He just sat next to that same tree and waited for a rabbit to smash itself and die.

Unfortunately, there were no more rabbits afterwards and the farmer's field grew nothing but weeds. The moral of this story from China is that nothing can be achieved without either working or paying.

Chinese idiom: 守株待兔 [shou zhu dai tu - literally, "Guarding the tree awaiting a rabbit" ] You're waiting for a rabbit.
